The restraints will need to be particular and something that your character would not typically be able to get themselves out of. But those or supervision would potentially work to keep someone from sleep-walking off. Something else to keep in mind is that sleep-walking characters may appear to be awake and even briefly converse with others, even if their conversation may be strangely stilted.
